Chicken Parm Bake
You'll Need:
2 boneless, skinless chicken breasts (cooked and cut into strips)
1/2 stick butter
1 sleeve of Ritz crackers (crushed into crumbs)
1/2 cup grated parmesan
1 tsp parsley
Directions: Cook chicken and cut into strips. Melt butter in microwave. In a bowl combine crushed crackers and parmesan cheese and parsley. Dip chicken into butter then roll in cracker mixture. Place in baking pan and bake at 350 degrees for just 10-12 minutes. Serve with rice or noodles.
For added effect/more of a casserole:
I mix up 1 can of cream of chicken soup, combined with 8oz sour cream and 3/4 cup milk. Cook 2 cups dry pasta (any style). Mix in the soup mixture and place chicken on top before baking at 350 degrees for 25 minutes.

Works 4 Me Wednesday: How I Tackle the Laundry Monster I've gotten quite a few emails this week in regards to tackling the laundry. Since this section of my site focuses on what works 4 me, I can only offer exactly that on the topic of laundry. I rarely have more than 1-2 loads of laundry at a time to tackle at our house. Here's how I keep the laundry running smoothly... 1) Do laundry daily I do laundry every single day. Yep, you read that right. Usually as soon as I get home from work (after I've kissed and hugged my little ones) I put a load of laundry right into the washer! This gives me time to move it into the dryer after eating and cleaning up dinner. And still have time to fold it and put it away before bed. I wash our bed sheets (for the whole family) every Saturday morning. I know many people who only do laundry 1 time per week. Growing up my mom had a set laundry schedule of Monday, Wednesday, and Friday. But I have found doing it daily to be less time consuming and daunting for me in the long run. Making it part of my every day, daily routine has caused me to get in the habit of putting it right in when I get home. 2) Always Fold What is in the Basket Before Adding More I have 1 small hamper and 1 laundry basket in my laundry room. I put all dirty clothes into the hamper and all clean and dried clothes into the laundry basket. I do not add any new clean clothes to the laundry basket until I have folded and put away the ones already in it. This keeps me motivated to empty the clean laundry into drawers and closets as soon as I fold it. I DO NOT throw dirty laundry on the floor or anywhere else, except in the dirty hamper. As soon as it is full (and often before it gets very full) I am doing another load of laundry. 3) Finish Before Bed This may be where the OCD kicks in again, but I never go to bed until all laundry that I had going is folded and put away. At the end of the night before crawling into bed I may have a half load or so of laundry in the hamper, but all full loads of laundry have been washed, dried, folded, and put away. 4) I Don't Iron I rarely break out the iron. (I hate ironing.) By immediately drying laundry that comes out of the washer and folding it as soon as it is dry (or very soon after) I don't have as many wrinkles to iron out. I do iron the occassional dress shirt or pants for my hubby, but really I don't iron much. I pay attention to tags when buying new clothes and try to choose wrinkle forgiving fabrics also. 5) Let the little ones help It isn't all that exciting to make laundry an evening activity, but in my house it is. My kiddos like the task of folding washclothes, socks, underwear, and towels. It is a good lesson in laundry and responsibility for them so I let them help. (Even if it does take a few extra minutes.) 6) Keep that laundry going I should also note that once your dryer is warmed up it uses less energy to dry subsequent loads. So, economically, the best attack plan is to keep the laundry going. As soon as you take one warm load out of the dryer have the next ready to go in. This is what works 4 me.
